Chocolate Chip Banana Cake 1
Once upon a time there was a blogger named Katie. She was a caterer who posted the most delectable recipes and gorgeous photos to go with it. Then one day, Katie and her blog Good Things Catered, disappeared. This is one of the great mysteries in the blogging community. What happened to Katie? Why did she delete her blog without any notice?
Like many of her fans, I was dismayed when she left. The good news is her recipes are still around the blogosphere. Like this Chocolate Chip Banana Cake. I wished that I could have gotten a picture of the entire cake but as you can see my husband took a few slices.
I named this Chocolate Chip Banana Cake 1 because there are other recipes that Katie had up her sleeve. Some using instant vanilla pudding mix and others with shortening in it. I chose this one because I had all the ingredients on hand. Enjoy!
Chocolate Chip Banana Cake 1
Ingredients:
- 1 1/2 c. all-purpose flour
- 3/4 c. sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 c. unsalted butter, melted
- 1/4 c. oil
- 1 1/2 c. mashed bananas (about 4 ripe bananas)
- 2 large eggs
- 1/2 tsp pure vanilla extract
- 1 heaping c. chocolate chips
Directions:
- Preheat oven to 350 degrees.
- Prepare an 9 inch cake pan
- In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt and set aside.
- In large bowl, mix together butter, oil, mashed bananas, eggs, and vanilla.
- Add flour mixture and fold until just combined (do not over mix). Fold in chocolate chips.
- Scrape batter into prepared pan and place into preheated oven.
- Bake until a toothpick inserted in center of a cupcake comes out clean, about 45-55 minutes.
- Remove from oven and let cool in pan.
