Happy 4th of July!
I hope you are all having a wonderful 4th of July! I'm so sorry for not updating this blog very often (all of that is about to change). These past few months have been difficult. My father just passed away this May. It's been a hard adjustment without him.
This cake is very simple to make. All you need is boxed white cake mix (you can even get the special 4th of July ones with sprinkles to mix in), whipped cream frosting and fresh berries (6 oz of blueberries and 1 lb of raspberries). I used a simple star cake decorating tip to get the piped stripes and edges.
Whipped Cream Frosting
Ingredients:
8 oz cream cheese at room temperature
1/2 cup sugar
1 teaspoon vanilla extract
1/8 teaspoon salt
2 cups of heavy cream
Directions:
Using a mixer with a whisk attachment, blend the cream cheese, sugar, vanilla extract and salt for about 1 - 2 minutes until light and fluffy. Be sure to scrape down the bowl as necessary. Reduce the speed to low then add the heavy cream slowly into the cream cheese mixture. When combined, increase the speed for 2 - 2 1/2 minutes until the whipped cream has stiff peaks.
