Bavarian Apple Torte

One of my family's favorite Fall desserts is this Bavarian apple torte.  It has a shortbread-like crust followed by a cheesecake layer and a tender crisp apple layer on top.
 

I love using honeycrisp apples for this torte.  I did not precook the apples nor did the apples weep very much while baking.  The little bit of juice that the apples produced carmelized over the sides and made the torte taste even better.  While the torte tastes fantastic on its own,  it wouldn't be a bad idea to drizzle caramel, cinnamon sugar sauce or sprinkle sliced almonds after baking on top. 

BAVARIAN APPLE TORTE
Ingredients:
3/4 cup butter or margarine, softened
1/2 cup sugar
1 1/2 cups all-purpose flour
1/2 teaspoon vanilla extract
Filling:
2 (8 ounce) packages cream cheese,
softened
1/4 cup sugar
2 eggs
3/4 teaspoon vanilla extract
Topping:
3 cups thinly sliced peeled tart apples
1/2 cup sugar
1 teaspoon ground cinnamon
Directions:

  1. Combine the first four ingredients. Press onto the bottom of an ungreased 9-in. springform pan. 
  2. In a mixing bowl, beat cream cheese and sugar. Add eggs and vanilla; mix well. Pour over the crust. 
  3. Combine topping ingredients; arrange apple slices to your liking. 
  4. Bake at 350 degrees F for 55-65 minutes or until the center is set. Cool on a wire rack. Store in the refrigerator. Cut into wedges with a serrated knife.
